My Almost Famous Chili Recipe.

I know what you're thinking, a chili recipe in the summer?! Is she crazy?! Well I probably am a little crazy, but not about this. When you live in a house that is constantly 67 degrees where you have to use a blanket on a 90 degree day in July, well let's just say chili is a welcomed meal. It's also a big deal in my house. We have very high standards to say the least and a flimsy attempt will only be met with ridicule and horror. Chili is a year round meal because we love it. With that being said, I offer to you my delicious, and almost perfected chili recipe. I've been making chili for years and while I sometimes like to try and play with it to see if I can make it better, this is my recipe at its best.

To make really awesome chili you must first put on one of your super hero t-shirts and get yourself a nice big cup of coffee (or tea) to be sipped out of your favorite mug. My favorite mug was a gift from my mom I use it almost every day. I let my chili cooks all day so I suggest preparing the first part the night before or early the morning you intend to serve it.

















You will need:
1-2lbs of ground beef (I use  family 2lbs because my fam prefers a meatier chili)
1-2 Cans of red kidney beans (I only use one for my family's preference)
1 medium onion
1 bell pepper
1 can/bottle of beer
2-3 cans of tomato sauce
1 can of diced tomatoes.
1 packet McCormick chili seasoning
Salt
Pepper
Garlic Salt
Crushed red pepper
Cayenne Pepper
Cinnamon
Worcestershire sauce
Frank's Red Hot sauce 




First you must brown the meat. Season it with some salt, pepper, garlic salt and a table spoon of chili powder. 

This is one of my favorite tools in the kitchen. The mix and chop is awesome for browning meat. I seriously recommend investing in one.













While the meat is browning chop up your onion and red pepper. Jonathan bought me this awesome kitchen scooper/ scraper/ measurer and it is another one of my favorite tools to use in the kitchen. It's also great for cutting dough. I love it!














When the meat is almost all the way cooked drain all the grease and then add the McCormick's seasoning.


Add the onion and bell pepper next. 

Then add a beer! 



Let the meato mixture cook in the beer on a medium low heat for about twenty minutes then put it in your Crockpot... If you don't have a crock-pot just cook the meat in the bottom of a larger pot and then you have one less dish to clean up! If you're making this the night before I suggest stopping here and putting the crock in the fridge until morning so the beer can continue to soak into the meat making it super yummy! 

The next step is to add the tomato sauce and then to season it up. I don't really measure so here are my best estimates of what I add. 2 tbs of Worcestershire sauce, 2 tbs Franks Red hot sauce, 2 tbs chili power, a pinch or two of crushed red pepper, 1 tbs cayenne pepper and a tsp of cinnamon. I like to keep my chili spicy so feel free to adjust the measurements accordingly.

 Cook the chili in the crock pot on low until you're ready to eat it! I like to eat mine over rice with a little shredded cheese or a dollop of sour cream on top. My mom likes hers over mashed potatoes while my dad keeps it simple with saltine crackers. 

My sister and I were impatiently waiting for the chili to cook in our sweet super hero shirts. 

She's such a goofball.
